Puff Pastry Pizzettes

Let me start by saying I did not have high hopes for this TWD recipe. It used scraps from another dish and had only a couple of ingredients, but man was I wrong. Since it was only scraps I decided to play with the ingredients and substituted the goat cheese for blue cheese – an ingredient which I utterly dislike when raw, but enjoy when cooked. I even added some olives and red bell peppers. Just for the sake of it, I also did some sweet ones with apple, walnuts and honey.

I put the batch in the oven and 12 minutes later these ugly looking scraps turned out into fancy looking, puffed up pieces of comfort and homyness. They were really tasty and made for a great midday snack. I would certainly know what to do with the scraps the next time around 🙂

I attribute the success of this recipe to the dough itself, thank you Marcel for this lovely and relatively easy to make puff pastry, it has certainly found its place in my repertoire!
